How to make your own homemade kefir

Utensils :

A glass jar (1L)
A wooden or stainless steel spoon
A cutting board
A funnel
A stainless steel strainer
A knife
Ingredients:

To produce 1 liter of fruit kefir, you will need the following ingredients:
Kefir grains (40g) : these grains will allow the drink to ferment and give it this particular taste.
Cane sugar ( 30g ) : a part of this sugar is consumed during the fermentation.
Yellow lemon ( 2 slices )
Dried figs (1 fig )
The steps :

Step 1 : In your glass jar, pour 1liter of water, and then add 30g of blond sugar.

Step 2 : Dissolve with your spoon, mixing well.

Step 3 : Add 40g of kefir grains that you will have drained beforehand

Step 4 : Add your fig and lemon slices.

Step 5 : Close your jar with the lid and wait 24 to 36 hours for the first fermentation: The fig will rise to the surface of the water and a foam will appear on the surface.

Step 6: Remove the lid of the jar and remove the lemon slices and figs. Then, using the strainer, collect the kefir grains so you can start another batch.

Step 7: Pour the liquid into a bottle, close it and let it rest for another 24 hours at room temperature so that the second fermentation can finalize.
Step 8 : Once the two fermentations are finished, you just have to put your bottles in the fridge, and enjoy!
